Fresh, vibrant and full of summer character, this is a playful twist on the classic. It’s juicy and refreshing, with a bright, citrus kick and a subtle, herbal note that keeps things light and balanced. It also works very well with non-alcoholic tequila. If you like, double the syrup quantities, because it’s delicious drizzled over pancakes or diluted with sparkling water for a refreshing, summery drink.

Strawberry and basil margarita Serves 1 For the strawberry syrup (for 6 serves) 75g fresh strawberries, hulled and chopped 75ml agave syrup For the drink 50ml tequila – just use your favourite (we use The Lost Explorer Tequila Blanco) Juice of 1 lime 25ml strawberry syrup (see above and method) 2 basil leaves First, make the syrup.

Put the chopped strawberries and agave in a blender and blitz smooth. Fine strain into a clean jar, then seal and store in the fridge, where it’ll keep for about a fortnight. To build the drink, put everything in a shaker filled with ice, add a basil leaf, seal and shake hard.

Strain into a rocks glass filled with fresh ice, garnish with the second basil leaf and serve.
